Keto baked meatballs


 

Easy and juicy meatballs under an hour! They are perfect for busy family night. They can be frozen and just tossed in the oven when ready to indulge. My whole family enjoys them and always asks for more. When it comes to meat choice, my go-to is ButcherBox with an excellent choice of grass-feed beef and heritage breed pork perfect for this recipe.

Servings: 24 meatballs

 

Course: Lunch, dinner

 

Ingredients:

 

1 lb lean ground beef or half ground beef and half ground pork (more juicy meatballs from my experience)

½ cup onion, finely chopped

¼ cup crushed pork rinds

2 garlic cloves, minced

1 egg

¼ cup parmesan cheese, finely grated

3 Tbsp. unsweetened ketchup

1 tsp. salt

¼ tsp. pepper

1 Tbsp. parsley, minced (or about ½ Tbsp. dried)

 

Preheat oven to 400ºF. Spray a large parchment sheet with cooking spray.

Mix together onion, pork rinds, garlic, egg, cheese, ketchup, salt, pepper and parsley in a large mixing bowl.

Add in ground beef and mix gently until combined. Do not overwork. Form into balls and place on prepared parchment sheet.  Usually it is 23-24 meatballs from this measurement.

Bake in preheated oven for 15-20 minutes, or until meatballs are browned and cooked through.

It goes great with cauliflower rice and veggie of your choice.
