Waffles are favorite breakfast for most of us. Plain or with adds on, kids and adults love having them for breakfast. In a morning rush the easiest thing is to grab the frozen ones from the fridge and just heat them up. But what we get from famous Eggo waffles? What is their nutritional value?
Hmm, not too much, just a load of carbs with a little protein- great recipe for that sugar crash at 11am. And what about that artificial yellow 5 and yellow 6? Thanks, but I will skip.
This morning I spent 10 min of my time to make a low carb version with a good amount of protein and fats to keep you and your kids happy and full until lunch. Mix it and heat up your waffle iron! Check it out!
Low carb waffles
Prep time: 10 min
Cook time: 8 min
Total time: 18 min
Ingredients:
4 medium eggs
4 TBS butter, melted
1 ½ unsweetened almond or coconut milk
1 tablespoon baking powder
1 cup whey protein
½ cup coconut flour
1 teaspoon vanilla extract
2 tablespoons cacao powder unsweetened
Preheat your waffle iron. Mix all dry ingredients in a bowl. Combine all wet ingredients in separate dish. Add slowly wet ingredients in dry ingredients bowl. Let it sit a few minutes and bake according your waffle machine instructions. Your waffle iron should be very hot.
I usually top them with melted sugar free chocolate chips for my kid. I eat them as a savory breakfast with eggs and bacon, it is up to you!
NOTE: Topping is not included in carb count!
Bon Appetit!
